OMG I HEART/// Farmhouse Delivery

newlogo2

Being a vegetarian, I'm a huge fan of vegetables. It's pretty much all I've got. ha. A while back Cheryl introduced me to Farmhouse Delivery over lunches at the Stash Factory. Farmhouse is a 'Farm to table' concept that pulls from local growers around Austin and Houston. After Cheryl introduced me to some of the weekly bushels and other products (ie eggs. cheese, Kosmic Kombucha!), I was in. I'm now on my second bushel from Farmhouse and I couldn't be more pleased. Other than making weekly deliveries, they send out emails letting you know what's coming in the delivery, where it's from, cooking tips, and markers to let you know which is organic and/or sustainable. Below is what hit my mailbox the morning of the delivery.

...like I said, I've been a vegetarian for a long time and it's easy to think that because you aren't eating meats, you are avoiding a lot of the issues in 'factory farming', but after a long discussion with Cheryl last night over sustainable farming and what you can feed crops and pass as legal, I am ready to never stray away from organic/sustainable produce. ever. It's a scary world out there when you do your research.

Whether you just like quality, or you care about what's feeding the things that are feeding you, or supporting local business, OR you just hate going to the grocery store, you should look into what 'farm to table' co-ops your city offers.

FEED THE BEAST /// Spicy Sweet Potato by Nolandia

Since Brandi is living it up in Costa Rica, we asked a few friends to step in and help me out this week on MMBB. First up is a yummy recipe from our friend Alexandria Nolan from Greetings from NolandiaAlexandria is a misplaced Michigander currently living in the wilds of the Houston urban jungle. Her blog focuses on health, fitness, travel and relationships. When she’s not writing, she’s getting fit, traveling or having a relationship with her husband, Terrence and her cat, Jables.

To me, recipes should be 3 things: *Easy*Healthy*Delicious
So with that in mind, today’s recipe is one of my all-time favorite go-tos, and it even works as a ‘cheat’ recipe on Brandi’s diet.  It’s vegetarian friendly, has complex flavors, and it fills up hungry men and ladies alike.

///Spicy Sweet Potato///

/Gather together (for two people)
>2 Large Sweet Potatoes
>1 Can black beans (or go old school and soak your own)
>1 Large ripe Avocado, sliced
>Your favorite salsa (ROYITO’S! for us)
>1tbsp cumin
>As much Cilantro as you need

/Method
Bake sweet potatoes in oven at 400 degrees until soft. (About 25 minutes?)
As potatoes bake, heat black beans and stir in cumin.
Remove from oven and smash onto plates or into a bowls
Layer each potato with the heated black beans, salsa to taste, sliced avocado and cilantro on top.
We like A LOT of cilantro on ours, and it’s full of vitamins A and C, so feel free to add as much as you dare. This recipe is also packed with fiber, protein and healthy fats from the avocado. My grandma would call it “a gut stuffer” because even though it’s super healthy, it’ll totally fill you up.
Eat it up!

Brandi's (and now Kelly) been working so hard to get super fit for this summer, so I wanted to make a recipe that would be filling, healthy, and delicious! This salad is so easy to make, too. Sweat every day, and refuel your body with fresh fruits and vegetables. You'll be happy, healthy, and ready for swim-suit season!

/// Mucho Mango Salad ///

1 head bibb lettuce
1 mango
1 garden tomato
1/2 avocado
1 handful cilantro
1 green onion

Bibb lettuce is a refreshing alternative to green romaine. The mango dressing makes this recipe filling, nutritious, and low fat. There's no need for oily dressings in our salads - that will just add unnecessary fat and weigh you down. This salad is a satisfying meal, great for replenishing after a hard workout, and totally healthy!

Chop up the lettuce and place in a large bowl. In your Vitamix (or high speed blender), blend the mango and handful of cilantro leaves until smooth. Pour over the lettuce and stir well until all the lettuce is covered. Dice the tomato and avocado and place on top of the lettuce. Finally, finely chop the green onion/chive and sprinkle over the salad. Top with some fresh ground pepper.

Enjoy!
